Nobel Mendy was born in the Senegalese Atlantic Sea coastal city of Guediawaye and played junior football in his home city until his family moved to France when Nobel was eleven years old. He continued his junior football in France with Normandy-based club Pacy Menilles and Parisian club Mantois 78 before signing a professional contract at French Ligue.2 side Paris FC in June 2021. He played regularly for the Paris FC B and U-19 sides during the 2021/22 season and became a mainstay of the B team during the 2022/23 season.

In December 2022 Mendy made his senior debut for Paris FC in a Ligue.2 fixture against Pau FC, a debut that lasted one minute plus additional time. He made two further senior appearances for Paris in August 2023 before joining Spanish La Liga side Real Betis in September 2023 on a season long loan. Deployed mostly in the club’s second team Betis Balompie (the club’s historic name from the early twentieth century), Nobel made the Betis first team bench on four occasions during the second half of the 2023/24 season and made his Betis senior debut in a January 2024 Copa del Rey tie against Alaves.

In June 2024 Real Betis exercised an option to purchase Mendy fo a fee just short of 1 million euros – he made 3 senior appearance for Paris FC during his three year spell in the French capital. During the 2024/25 season he again served Betis Balompie while also regularly sitting unused on the Real Betis first team bench. He also made further forays into the first team, playing in an October 2024 Europa Conference League tie against Legia Warsaw and starting an October 2024 Copa del Rey tie against CD Gevora. In the final month of the season he broke into the first team, making his La Liga debut against Atletico Madrid in May 2025 and coming off the bench in the Europa Conference League semi-final second leg against Fiorentina – Nobel was an unused substitute for the Europa Conference League final played later in May 2025 that Betis lost to Chelsea. This took his tally for Real Betis to 8 senior appearances.

In August 2025 Nobel joined Madrid-based Spanish La Liga side Rayo Vallecano on a season long loan with an option to purchase at the end of the 2025/26 season. Mendy made his debut for Vallecano in October 2025 against Levante and scored his first senior goal in December 2025 against Valencia. He became a first team regular for Rayo as the season wore on and also contributed to the club’s Europa Conference League campaign, playing in three ties including the May 2026 final lost to Crystal Palace – Mendy therefore claimed losers’ medals in two consecutive Europa Conference League finals. By the end of the 2025/26 season Nobel had scored two goals in 28 appearances for Rayo Vallecano and impressed sufficiently for the club to exercise their option to purchase him in July 2026 for a fee of around 8 million euros. A month later Hull City swooped for his signature, netting Rayo Vallecano a tidy profit.

In March 2026 Mendy received his first call-up to the Senegal senior international team, he was an unused substitute against Peru then won his first cap three days later when starting a friendly against The Gambia.
